Mint Mojito Family Cooler

The virgin mojito, bruised fresh mint, lime, Minnies Mint Mojito Syrup, and ice-cold soda water in a pitcher. Looks beautiful on a summer braai table. Five minutes from fridge to glass.

Ingredients

  • 1 small bunch fresh mint (about 30 leaves), plus extra sprigs to garnish
  • 6 tbsp Minnies Mint Mojito Mocktail Syrup
  • Juice of 4 limes (~⅓ cup), plus 1 lime sliced into wheels
  • 1 cup crushed ice (more in the glasses)
  • 1 litre chilled soda water (or sparkling water; lemonade for sweeter)

Method

  1. In the bottom of a large pitcher, gently bruise the mint leaves with a wooden spoon — press, don't pulverise. You want the essential oils, not a green slurry.
  2. Pour in the Mint Mojito Syrup and lime juice. Stir with a long spoon to dissolve.
  3. Add the crushed ice and lime wheels. Top with soda water and stir ONCE gently — over-stirring kills the bubbles.
  4. Pour into chilled glasses over more crushed ice. Garnish each glass with a fresh mint sprig and a lime wheel.
