Sticky-glazed chicken wings on a black plate with sesame seeds and spring onion

Sticky Wings

The classic SA braai starter. Wings marinated overnight in Grill Basting, then finished with a Smokey BBQ + honey glaze that caramelises onto the skin, crispy at the edge, sticky through the middle.

Ingredients

  • 1 kg chicken wings, jointed (flats + drummettes)
  • 3 tbsp Minnies Grill Basting
  • 1 tsp sea salt
  • ½ tsp cracked black pepper
  • 1 tbsp neutral oil
  • ⅓ cup Minnies Smokey BBQ Sauce
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 2 cloves garlic, crushed
  • 1 tbsp butter

Method

  1. Toss wings with Grill Basting, salt, pepper, and oil until evenly coated. Cover and refrigerate at least 2 hours — overnight (12-24h) gives the deepest flavour.
  2. Build a two-zone braai fire: bank the coals to one side so you have a hot direct-heat zone and a cooler indirect-heat zone. On a kettle braai, light coals on one side only and close the lid; on an open braai, just keep one half of the grid coal-free.
  3. Lay wings on the grid over the cooler (indirect) side. Cook 25-30 minutes, turning every 8-10 minutes, until the juices run clear and the skin is starting to brown. Lid down if you have one. The wings are mostly cooked through at this point.
  4. While the wings cook, make the glaze: in a small pan, melt the butter. Add the crushed garlic, cook 30 seconds, then pour in Smokey BBQ, honey, and soy. Stir and simmer 2-3 minutes until thickened and glossy.
  5. Move the wings over to the hot direct-heat side. Brush generously with the sticky glaze. After 30-60 seconds, turn and brush again. Repeat 3-4 times until the glaze sets into a sticky crust on both sides. Watch closely — the sugar burns fast over direct heat.
  6. Pull off the braai, rest 3 minutes (lets the glaze grip), then serve.
