Mint Mojito Granita with a Blue Curacao Splash

Mint Mojito Granita with a Blue Curacao Splash

The dessert equivalent of jumping into a pool. Frozen mint and lime crystals, scraped into something between a sorbet and a slushie, finished with a splash of Blue Curacao Mocktail Syrup that pools at the bottom of the glass like a tide coming in. Built for Durban heat.

Ingredients

  • 750ml water
  • 1/2 cup castor sugar
  • 1 cup Minnies Mint Mojito Mocktail Syrup
  • Juice of 2 limes
  • A handful of fresh mint leaves, torn
  • 1/4 cup Minnies Blue Curacao Mocktail Syrup, to finish
  • Lime wedges and mint sprigs, to garnish

Method

  1. Heat the water and sugar in a saucepan until the sugar fully dissolves. Cool completely.
  2. Stir in the Mint Mojito Mocktail Syrup, lime juice and torn mint leaves.
  3. Pour into a shallow, freezer-safe dish and freeze for 1 hour.
  4. Remove and scrape the mixture firmly with a fork, breaking up any ice crystals that have formed. Return to the freezer.
  5. Repeat the scraping every 45 minutes for 3-4 hours, until you have a light, fluffy mass of ice crystals — this is what gives granita its texture.
  6. To serve, spoon the granita into chilled glasses and pour a splash of Blue Curacao Mocktail Syrup over the top, letting it sink through the ice.
  7. Garnish with lime wedges and mint sprigs.
