Ingredients
- 500g chicken fillet, cut into strips (for the chicken)
- 6 tbsp Minnies Seasoning Salt Hot (for the chicken)
- 1 tbsp oil (for the chicken)
- 2 eggs (for the crumb coating)
- 3 tbsp Minnies Peri-Peri Sauce (for the crumb coating)
- 2 cups corn flakes, crushed (for the crumb coating)
- 2 tbsp Minnies Seasoning Salt Hot (for the crumb coating)
- 125g butter (for the honey garlic sauce)
- 4 tbsp garlic, crushed (for the honey garlic sauce)
- 1/4 cup Minnies Peri-Peri Sauce (for the honey garlic sauce)
- 100ml honey (for the honey garlic sauce)
- Oil for frying, or cooking spray for the air fryer
Method
- Toss the chicken strips with the Seasoning Salt Hot and oil. Cover and marinate in the fridge for at least 20 minutes.
- In one bowl, beat the eggs with the Peri-Peri Sauce.
- In a second bowl, crush the corn flakes finely and mix through the remaining Seasoning Salt Hot.
- Dip each marinated chicken strip into the egg mixture, then press into the corn flake crumb, coating evenly on all sides.
- Fry in batches in hot oil until golden, crispy and cooked through, about 4-5 minutes — or air-fry at 200C for 12-15 minutes, turning halfway.
- While the chicken cooks, make the honey garlic sauce: melt the butter in a small saucepan over medium heat. Add the garlic and cook for 30 seconds until fragrant, without letting it brown.
- Stir in the Peri-Peri Sauce and honey. Bring to a boil and let it bubble for 1-2 minutes until slightly thickened and glossy.
- As soon as the chicken comes out of the fryer or air fryer, pour over the hot honey garlic sauce and toss to coat.
- Serve immediately, while the coating is still crisp.
