There is no wrong way of cooking, just your way. Also, the names of sauces should never be used to determine its sole use. Our sauces can be used almost anywhere and its uses is only limited by ones imagination.

Turn a sauce into a marinade… just add an acidifier such as Lemon, Orange,
Vinegar, anything acidic will help tenderise your meat.
